Strawberry Banana Pancakes

Did you know National Pancake Day is March 1, 2011?  IHOP is offering a short stack of complimentary pancakes from 7 am to 10 am. Apparently, my office frowns upon me having breakfast at those hours when I’m expected to be at the office.  However, in celebration of Strawberry Month (February) in Florida and National Pancake Day I made some strawberry banana pancakes this past weekend.

So get out there and celebrate National Pancake Day, but if you’re like me and you can’t… do it on another day.  Here’s my recipe for Strawberry Banana Pancakes

Ingredients:

Fresh ripe strawberries sliced and halved

2 large bananas (ripened) for batter 1 small banana for garnish

1 1/4 cup flour

2 teaspoon baking powder

3 tablespoons sugar

1/4 teaspoon of salt

2 eggs

1cup milk

Directions: Mash bananas with a fork in bowl.  Add dry ingredients. Add remaining wet ingredients. Mix well with a fork.  Break up lumps of flour with fork.

Preheat nonstick pan on medium heat spray with nonstick Pam. Ladle in a scoop of batter. When it starts to bubble flip pancake. Garnish pancakes with strawberries and bananas. Serve with favorite syrup. Makes about 14-18 pancakes. Serves 4-6. I cut my ingredients in half for the two of us.

Mmmmmm the banana taste of the pancake was scrumptious. A hearty filling breakfast for sure.

    Thank you for the recipe. I’ve only tried the pre-mixes, but this looks just as easy and probably 100 times tastier.

     
    • Jean, the only catch is that they ask you to donate to the Children’s Miracle Network. You don’t have to in order to still get your free short stack, but even if you donate a buck…it’s still a great deal!

      Yes, I had never made pancakes from scratch either until just recently, and it is just as easy AND much tastier!

       
  2. I missed out on the IHOP free pancakes. I’ll just have to stare at your pictures and crave some pancakes. I love eating pancakes with whip cream.

    • Yes, I agree Yvette, they are for a relaxing Sunday morning. Not because they take long to make, which they don’t but you might need a nap after this hearty breakfast 🙂 Certainly a weekend reward-yourself-good-kinda-thing.

  7. Mmmm, pancakes. How did I miss this post last week?

    IHOP does this every year, if I remember correctly. So cool of them, but I’d hate to be in line all that time for free pancakes, when they taste so much better homemade.
