Easy Holiday Sausage Apple & Cranberry Dressing

The Stuffing v. Dressing  debate. It’s been around for eons.  I suppose it depends on the region and family background you come from. When I was a little girl, (in the mid west) my mother called it stuffing, so growing up and when I finally hosted my first family Christmas dinner for 30 people, (talk about getting a crash course in huge family dinners) I too referred to is as stuffing. Over the years I’ve come to learn, and which is what most people believe, stuffing is what goes in the turkey and dressing is what is outside the turkey. Easy peasy.

My sister-in-law was the one who originally taught me to flavor the dressing with sausage.  I have since modified my own version of this dressing recipe and I also don’t put the stuffing inside the turkey anymore. So hence, I call it dressing.  I also used to use those horrid stale croutons cut of stale bread from our local supermarket bakery. I have since switched to my mother’s way. Using a fresh baked bread. Tee hee, I still get it at my local supermarket bakery and use a sourdough and Italian combination. Whether you are a “stuffing” or “dressing” kinda person, or you use croutons v. fresh baked bread, this sausage, apple, & cranberry dressing is both tasty and a beautiful addition to your holiday spread.  I’m all about easy clean up so I used a throw away foil pan and transferred it to a pretty bowl at presentation time.

Easy Holiday Sausage Apple & Cranberry Dressing

Serves: 6-8
A tasty and beautiful addition to your holiday spread.
Ingredients
  • YOU WILL NEED:
  • 1/2 loaf of cubed sourdough bread
  • 1/2 loaf of cubed Italian bread
  • 1 stick salted butter (melted)
  • 1 small red/purple onion chopped
  • 4-6 tablespoons approximately) chopped celery ( i use just enough to flavour but not overpower the dressing)
  • 1 sliced honey crisp OR granny smith apple
  • 1 cup dried cranberries
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1/2 teaspoon salt
  • 1/2 teaspoon of pepper
  • 1/2 cup chicken broth (add a little at a time until moist. Add more if needed)
  • 4 mild sausages de-skinned, chopped and cooked until almost done (don’t forget you will be baking and don’t want to dry out your sausage)
Instructions
  1. Preheat oven to 325 degrees
  2. De-skin sausage, chop and cook in pan until just underdone
  3. set aside.
  4. Cube bread and place in large baking dish
  5. Melt butter and add chopped onion and celery and cook in pan until onion is transparent
  6. Pour melted butter, onion, and celery mixture over bread
  7. Add spices, salt and pepper
  8. Mix well with a spoon
  9. Moisten with chicken broth (add a little at a time)
  10. Add chopped apple, sausage and dried cranberries.
  11. When ready place in oven for 30-40 minutes or until warmed through. If you like a crispy top leave in a little longer.

Are you a “Dressing or Stuffing” person?

Christmas Eve 2010

This month has literally been a blur. From the time the Turkey carcass was tossed out, the Holiday rush to get things done has been on! I don’t know about you, but I’ve barely had time to breathe let alone write a blog.

Although, I did manage to get a few in since Thanksgiving, which I think were quite useful.  Who doesn’t love Chocolate Peppermint Martini’s and Rolo Pretzel Turtles ?

Not only has this month been a whirlwind trying to prepare for the Holidays, we have had overnight guests every weekend since the beginning of the month.  I’m not complaining, it’s been fun, it’s just that I wasn’t able to get my errands, baking, decorating, and shopping done on the weekends as I normally would.  Therefore, I would use my lunch hour and after work hours tending to all that other stuff. I’d be up to 1:30 in the morning sometimes.  It took me 6 hours to bake 45 cut out cookies and ice them, 

but I have to say, I’m quite proud of them.  I’m getting better at them.

Today is finally the day I can slow down and enjoy the festivities that all these preparations have led up to.  I won’t be going back to my home state to be with my family, like I did last year.  I do miss my children and family very much, but they are in my heart and soul, and I’m going to try to send a Christmas vlog to them.  I’m excited to open up the gift my kids had delivered to my office.  I’m not allowed to open it until Xmas, so I cheated and opened the card.  And so glad I did.  I love my kids.

This year I’ll be spending Christmas Eve with TZ, my boyfriend, who some think is simply a figment of my imagination.  His brother will get in from Tampa somewhere around 2 am.  I’m planning on building my Gingerbread house tomorrow while TZ grills the bird and the guys watch football. I ran out of time, and searched high and low for a Gingerbread cookie cutter set. I refused to buy the kit….pfft that’s the easy way out!

I finally found one at Michael’s Craft Store. And believe me when I say it was the last one! But like I said, I ran out of time.  As a Christmas Miracle would have it, one of our investigator’s that works for our office, came in to the office yesterday and gave a few of us girls Gingerbread kits. Oh happy day!

I plan on spending the day lounging around and basking in all the wrapping paper mess and morning mimosas, followed by chocolate peppermint martini’s in the afternoon and all the Turkey and stuffing and cheese ball and crackers, and cookies…etc. my belly can hold.

However, tonight TZ and I are spending together. I have the whole evening planned (at least in my head, I know it probably won’t play out like the picture in my mind.)  I’ve planned a special lasagna dinner for us (home made of course.)  I’m even throwing a little romance in there, Santa cap and all, with a bottle of wine and something that starts with an L and ends with an E! And it ain’t love my friends.  By the way, it counts as one of his gifts!

I wish you all a Blessed and Very Merry Christmas and a Very Happy New Year.  I hope Santa is good to each and every one of you.  I’ll also be remembering our Troops and public service men and women who won’t get to spend this Christmas with their families. Did Someone Say Chocolate Peppermint Martinis?

Over here, okay it was me. I said it.  Want one? I’m obsessed with peppermint and snowflakes this Christmas. I don’t know, maybe it has something to do with the fact that it never snows here,(well, 33 years ago it once snowed here in south Florida but I was 10 living in Ohio.) and I’m longing for the magic and nostalgia of Christmas. What better way to capture it than decorating my place with snowflakes and enjoying the cool mint flavor of a chocolate peppermint martini? Anything goes with chocolate even ants!

Your holiday guests will enjoy these, guaranteed.  Just make sure you don’t make Aunt Irene’s too strong, because I promise you she will be begging for seconds.  Remember, she already had one hip replacement!

What you will need: (if making more than one at a time, remember it’s equal parts of everything, or you can cut back or be generous with certain ingredients. *wink wink*)

1.) 1 oz. Vodka

2.) 1 oz. Peppermint Schnapps

3.) 1 oz. Chocolate Syrup (and for garnish in glass)

4.) 1 oz. of Milk (half and half , Silk for the lactose intolerant, or I’m going to get creative and try Coffee Mate Peppermint Mocha creamer)

5.) 1 oz. of Baileys Chocolate Mint Liquer  (fyi…I made a little adjustment to my proportions of alcohol.  I wanted to taste more peppermint so I did 1/2 oz .of Baileys and 1 1/2 oz. of Peppermint Schnapps, did the trick for me.)

6.) Finely crushed peppermint candies, small candy canes, Andes peppermint candies, or Ghirardelli peppermint bark, and Whipped Cream (for garnishes)

7. Ice

8. Martini Shaker

Moisten martini rim and dip in crushed peppermint candies. With chocolate syrup make a Star at the bottom and sides of the glass.  Add ice and pour all ingredients into martini shaker and shake well. Strain into martini glass and garnish with whipped cream and your favorite peppermint candies (ie Ghirardelli peppermint bark, Hershey’s Peppermint Kisses, Andes peppermint pieces or a small candy cane.)

Rolo Pretzel Turtle Recipe Easiest Holiday Recipe Ever!

The Holiday Season is stressful enough with all the extra errands and running around for gifts, holiday parties, post office trips etc. I Love LOVE love the holidays, but I’m all about saving time on cleaning, decorating, baking and errands, so there is more time to enjoy activities with family and friends.

So it’s nice to have a Holiday Recipe that doesn’t eat up a lot of your time. Instead, you’ll be eating this one up in no time and your holiday guests will thank you for it.

Rolo Pretzel Turtles

What you will need

1. Bag of Rolos chocolate covered caramels

2. Bag of Mini Pretzels

3. A can of your favorite Peanuts (Pecans, Cashews, etc)

Directions

Preheat Oven to 300 degrees. Lay parchment paper over a cookie sheet. Put down mini-pretzels and unwrap and place a Rolo over top of the pretzel. Place in oven for 4 minutes.  Take out of the oven and while still ooey gooey warm place your favorite Peanut on top.  Cool completely before storing away. If serving warm, make sure you don’t scald your guests palates or tongues.  No one likes a trip to the ER during the Holidays!

And Viola! You now have an exquisite holiday treat to serve your guests that took no time at all.  Mmmmm sweet and salty!

Personally, I prefer to use cashews. Pecans remind me of Palmetto bugs!

I hate Palmetto bugs! Leave it to me to ruin a perfectly good holiday recipe!
