Honey Lime Chipotle Shrimp Tacos With Pineapple Mango Salsa

A delightfully heat and sweet dinner treat that's good for you.
Ingredients
  • FOR THE MARINADE:
  • 1 small can adobo sauce with chipotle peppers ( you can find this in the taco isle at your local grocers.)
  • 2 tablespoon extra virgin olive oil
  • 2 tablespoons of honey
  • 1 whole lime zest plus juice
  • 2 finely chopped fresh garlic cloves (fresh is always better)
  • 1 teaspoon kosher salt
  • 1 tablespoon fresh chopped cilantro *Optional (I didn’t use cilantro because I was out.)
  • 25-30 large uncooked peeled and deveined shrimp (shrimp shrinks when it is cooked…haha that’s why they call it shrimp!)
  • FOR THE PINEAPPLE MANGO SALSA:1/2 chopped fresh pineapple (I slice mind down the middle and only use half)
  • 1 chopped ripe mango (YouTube had great tutorials on how to shop for and slice a mango)
  • 4 tablespoons chopped red onion (or more if desired)
  • 6-8 chopped grape tomatoes *optional
  • Juice of 1 large lime (or 2 small limes)
  • 1 tablespoon chopped fresh cilantro *optional
  • ½ teaspoon kosher salt
Instructions
  1. DIRECTIONS FOR THE MARINADE:
  2. Open and pour the adobo sauce into a bowl.
  3. Remove most of chipotle peppers, or leave them in for extra heat.
  4. Add all the other ingredients and squeeze in juice of lime.
  5. Whisk together.
  6. Put shrimp in ziploc bag and pour in marinade.
  7. Marinate for at least two hours. Overnight is best.
  8. DIRECTIONS FOR THE PINEAPPLE MANGO SALSA:
  9. Chop pineapple, mango, onion, and tomato into uniform small pieces.
  10. Add rest of ingredients.
  11. Squeeze in fresh lime juice and mix.
  12. Let set for at least ½ hour or longer for flavors to marry.
  13. Assemble and add your favorite fixin's
