You have your choice between a salmon box, a whitefish box or a wild combo box with a mix of the two. I went with the salmon box, because we are total salmon lovers here.

The salmon arrived frozen & packaged with dry ice. Each piece is individually packaged.  I just transferred it right into some large ziplock bags and over to my freezer. Whenever I want fresh wild salmon I just defrost a couple of pieces without the hassle of going to the seafood market or waiting in line at the grocer fish counter. Gah, that takes forever!

The salmon for this taco recipe is marinated in a quick & simple sweet & spicy marinade where Asia meets Mexico. It’s a quick marinade time so on those nights when your pressed for time this comes together quickly. I  had make ahead flour tortillas on hand for this recipe. If you’ve never had homemade tortillas before, I urge you to try them. They are quicker and easier than you think.

I personally prefer a sweet & spicy salsa with fish tacos. Mango season is going into full swing here in South Florida. On my daily walks I rescue the mangoes that have fallen to the ground. Fair game right? I have a dish full of mangoes ripening at different stages, so keep an eye out for more mango recipes.

FOR THE MARINADE:

In a small bowl add all the marinade ingredients and whisk together well.
Place in a sandwich sized ziplock bag and place in refrigerator for 15-30 minutes.

FOR THE MANGO SALSA:

Mango Salsa for Grilled Salmon Tacos
Slice a fully ripe mango into small cubes and place in a small dish/bowl.
Wash, seed and dice jalapeño, add to bowl along with diced onion, cilantro & juice of one fresh lime.
Place in fridge until ready for use.

Mango Salsa for Grilled Salmon Tacos

When ready to grill Preheat grill to high (about 500 degrees.) You can also grill on a countertop grill as well or cast iron grill will also work.
Before placing salmon on the grill, oil the grates with an oil of choice so fish won’t stick. We prefer avocado oil because of the high smoke point.
Remove salmon from the marinade and place carefully on the grill and cook with lid open.
Lightly salt & pepper to taste.

Grilled Salmon Tacos
Cook about 3-4 minutes per side. When you can lift the salmon off the grill easily with a spatula it’s time to flip.
Flip carefully and finish grilling other side of salmon 3-4 minutes. Salmon is done when it flakes off.
Remove from grill.
