I love me a sheet pan dinner. Fast. Easy. Delicious. Mexican cuisine is one of my favorites to cook and eat so when I discovered the sheet pan dinner concept while looking for Whole 30 meals, I came across a recipe for Sheet Pan Fajitas from Laughing Spatula and knew I had to try it.

I mean she had me at sheet pan dinner really. All ingredients in one pan! Where do I sign up as quick as possible?

Since making her sheet pan dinner recipe for the first time last year, I fell in love with it. When we have fajita night at our house, I usually make up a marinade and let it sit in the fridge all night. There’s no need for that with this meal and the marinade mixes up in a snap.

I have come to adapt her recipe to my own liking. The addition of honey and lime really make this recipe pop. You can also switch out your protein for steak, chicken, pork, or shrimp. You will have to adapt your cooking times according to what protein you choose. I usually use shrimp or chicken as our choice.

When I’m making the chicken I bake everything together at one time. Shrimp has a very short cooking window, so you’ll want to bake the peppers and onions for a short while before adding the shrimp.

You can serve these with homemade warm tortillas, over rice, or eat as is with a fork. If I’m serving with tortillas, I’ll usually make them the day before and just quickly warm them before we eat.

The addition of instant potato flakes and bacon lard keep the tortilla soft and tender and you can’t beat the taste of homemade tortillas.

Sheet Pan Shrimp Fajitas

Ingredients

  • 1 lb frozen peeled & deveined shrimp thawed
  • 1 orange pepper – sliced
  • 1 yellow pepper – sliced
  • 4 jalapeno peppers -seeded and sliced
  • 1 large red onion – sliced
  • 1/3 cup olive oil
  • 2 1/2 teaspoons chili powder
  • 1 1/2 teaspoons cumin
  • 1/2 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/8 teaspoon ground oregano
  • Pinch of red pepper flakes
  • 1 teaspoon salt
  • 1/2 teaspoon ground pepper
  • 2 Tablespoons raw organic honey
  • Juice of one lime
  • 1 lime sliced for garnish
  • Chopped fresh cilantro for garnish

Instructions

  1. Preheat oven to 350 degrees.
  2. Remove tails from peeled and deveined shrimp and rinse and drain. Set aside in a bowl.
  3. Mix up marinade, whisk well, and pour half the mixture over your shrimp. Cover and place in refrigerator until ready to bake.
  4. Rinse, seed and slice peppers and onion roughly the same size for an even bake.
  5. Place into big bowl and pour remaining mixture over peppers and onion and mix well to coat.
  6. Transfer to a sheet pain covered with parchment paper.
  7. Bake peppers and onions 10 -15 minutes or until they are only slightly crisp.
  8. Add shrimp and bake an additional 5-6 minutes or until shrimp are pinkish in color
  9. Remove from oven and garnish with sliced lime or chopped cilantro.
  10. Serve with tortillas, rice, or eat as is.
