Best Smoked Hot Wings: Brown sugar & Pineapple sauce

Yes, I’m well aware that summer is over and we are now into the thick of Fall. I can give you a million reasons why I didn’t post this recipe during summer, but why bother. I’m already busy enough.

The good news is, that in most of the country it’s still warm enough to grill outside. Even if it is sweata weatha. Put them on and go out and grill these delicious chicken hot wings with the best hot wing sauce asap.

For those of you that live in the Deep South, put your sweaters away. You won’t need them. It’s basically still Summer and we can grill whenever the hell we want.

Should I use frozen or fresh chicken wings?

Here at out house we buy our chicken wings fresh instead of frozen. No judgement if you like frozen.

Sure, it takes a bit more time to cut and trim the chicken wings, but we’ve found the taste to be much fresher and meatier. There’s a lot of videos on YouTube that show you how to separate chicken wings.

I don’t like to waste things, so I’ll save the trimmed scraps and freeze them for later use as a homemade chicken stock.

How should I cook my chicken wings?

We almost always smoke or grill our wings. Both our smoker and grill went at the same time so Terry really did his research and purchased a pellet smoker grill that has direct and indirect heat. I linked the exact smoker we purchased down at the bottom of the post if you’re interested in which one we chose.

You may choose to air fry, grill, bake, or deep fry your chicken wings. It’s a personal preference, but I encourage you to try smoked chicken wings. If a smoker isn’t in your budget you can make your own smoker pouches for the grill. Again, YouTube has lots of tutorials on how to do that.

When should I add the sauce to my chicken wings?

We like to smoke our wings until they’re about 5-10 minutes from being cooked. We take them off the smoker and dunk them in batches in the pot of sauce and place them back on the smoker to finishing cooking.

Before they are plated we give them one more dip in the sauce for good measure. This is really one of the best hot wing sauces I’ve ever tasted. The sweet and spicy go really great together. The little pineapple pieces add a great element to the sauce that really sticks to the wings. Reducing the pineapple juice down makes all the difference.

A side note is to make sure that you have 100% pineapple juice, even in your crushed pineapple can.

Can I save any sauce left over?

We don’t usually have any left over sauce. If we do, sometimes I’ll cover it and put it in the fridge which is good for up to 3 days. Other times if we just have a little I’ll pour it right over the left over wings and place them in a plastic zip bag for the next day’s lunch.

I just don’t recommend that you use the sauce on any other meat once you’ve dunked your chicken in it. But this sauce would be great for a whole roasted chicken or a beer can chicken sauce as well.

I always say get creative in the kitchen.

This is my best brown sugar, pineapple, and honey hot wing sauce. This will become one of your favorite hot wing sauce recipes to make at home. It’s sticky, sweet, & delicious with just the right amount of heat.

Ingredients

  • 1 6 oz can Pineapple Juice

  • 1 20 oz can Crushed Pineapple in 100% pineapple juice

  • 1 Bottle of Favorite Hot Wing Sauce

  • 2 Tablespoons Brown Sugar

  • 1/4 cup raw unfiltered honey (or your favorite honey)

Directions

  • In a heavy bottomed non reactive sauce pot on medium heat pour in 6 oz can of pineapple juice.
  • Strain crushed pineapple and add juice to pot with can of pineapple juice.
  • Reserve about 1/4 cup of crushed pineapple for later.
  • Reduce pineapple juice over a medium simmer until juice is thick & syrupy. This can take several minutes up to 25 minutes depending on how high your simmer is.
  • When the pineapple juice has reduced to thick & brown syrup pour in bottle of hot sauce
  • Add 2 Tablespoons of brown sugar.
  • Continue to simmer the sauce for another 5-10 minutes or until sauce thickens. The longer you simmer the sauce the more it reduces and the hotter it will be.
  • When sauce has thickened remove from heat and let come to room temp before adding honey & crushed pineapple.
  • Sauce is ready to coat your favorite smoked, grilled, baked, or fried chicken wings
  • Depending on how you cook your chicken wings a few minutes before the chicken is done put the wings in a sauce bath and return them to their cooking vehicle to finish off.
  • Before plating the chicken wings dunk them in the sauce once more and plate them.

Notes

  • Sauce is enough for 20-30 chicken wings.
  • We usually don’t have sauce left over or very little. You can refrigerate the sauce in a covered container for up to 3 days. If you’re eating leftover chicken wings the next day, the sauce is a great way to add some moisture and flavor back before reheating.
